What an informative post, this is one area I did not know had big differences!
I had no clue there were that much of a difference in cinnamon. I use it to prevent oral thrush that is caused by my steroid inhaler.
There is also Saigon cinnamon which has a really lovely pungent yet sweet taste. I use it when I make my Vietnamese coffee ice cream (with pro-thyroid, pro-metabolism gelatin of course)!
